For Pursuits ?

A class-Infernus,Banshee,Locust 69(best pursuit car ig imo)
B class-Sultan
C class-Euros
Muscle class-dont use it for pursuits
D class-again dont use it but if you have no choice go with Kuruma
E class-Moonbeam
Vintage class-no
Suv class-no

Basically,you need to have a fast accelariting car,so that when you reset near cops you dont get busted.As soon as you reset you need to accelarate from 0-100 immediately and avoid objects in the way.
